WHere is a simplified interpretation of a beverage found on our latest cocktail list. It's a batch pre-mixed which is bursting with the tastes of a holiday season, making it ideal for a celebration. Any leftover cordial to use in breakfast cocktails, puddings, or to make another batch of the drink.
The Bikini Cocktail
Makes enough for 10 guests
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Syrup: Place the listed components into a pan, bring to a gentle boil, agitating so the sugar melts. Then, take off the heat and let it to cool down fully. Pour to a clean bottle, cap it keeping it chilled, where it will keep for up to four weeks.
To make Batch Mix: Mix the specified liquid ingredients into one big jug, let it rest for an hour, then pass it through preferably using a fine cloth, making it perfectly clear.
For serving: Add 85ml of the batch mix to a mixing glass filled with ice, and stir carefully for a minute to cool it down. Filter to a frosted cocktail glass or similar, garnish with a few cranberries and complete it by giving it a light spray of mandarin oil above the glass.
